I have been taken out to lunch or dinner. However, I received flowers from my employer once; that was a nice touch to make me feel welcome. You could decorate their desk or office as well if appropriate.

My pm at the property I recently transferred from asked what some of my favorite things where (snacks, colors, etc) and when I went in on my first he had all my favorites laid out on my desk and the entire thing was covered in confetti. He also got me lunch.
We also have a handy checklist that helps our hiring manager onboard the new team member. Including an email/ phone call BEFORE their first day with pertinent information and help calm nerves. Checklist goes over a number of other things such as have work space cleaned and ready, passwords prepared, team member contact list, etc
Our company has a process (checklist) for this. We send the new hire a welcome letter a few days before so the new hire knows what to expect the first day. We buy them breakfast (a dozen muffins, donuts, etc) to put on their desk to encourage current employees to stop by their desk/office and introduce themselves and we buy the team lunch. The new hire should receive a small gift. I usually buy them a pretty thick notebook, some candy, flowers, a card, etc.
The best onboard I had was a bunch of company swag and lunch. I still have a lot of those t-shirts and other things even though I don’t work there anymore!
I was sent flowers the day before my first day saying “welcome to the —-new company—-“ and then on my first day I had a high quality branded luggage bag, branded zip-up fleece, name tag, and lap top/lap top sleeve.
Gift bag of company swag, a welcome card, lunch, business cards, name tag and making sure everything is ready for them to work! It seems silly the last few, but if they have everything they need in a nice organized manner it’s definitely appreciated!
One company sent a cookie bouquet a few days prior to start welcoming me to the team. Another sent a swag box with a hand written card from the management team.
Company swag presentation with motivational book set. Also received an Edible Arrangement once. I think a company "Must Know" booklet or sheet would be helpful. It's nice to know expectations upfront on things that are common but different with every company. Add a list of who their people are - HR, AP, Accountant phone and email. Set them up for success to know who to reach out to and how.
